No more ready-made curry paste from the supermarket. This recipe is easy and the paste is great for freezing in small portions. Simple, delicious and vegan. For a delicious dinner in no time at all.
Ingredients for one glass:
- 4 red chillies (remove the seeds)
- 4 tsp coriander seeds
- 2 tsp caraway seeds
- 2 tsp cashews
- 2 stalks of lemongrass
- 2 tsp freshly grated ginger
- 2 cloves of garlic
- Peel & juice of one lime
- 2 tsp tomato paste
- 2 tsp soya sauce
Roast the coriander seeds, caraway seeds and cashew nuts in a frying pan for a few minutes, swirling occasionally. Leave the mixture to cool and crush it in a mortar.
Place the mixture with the other ingredients in a blender and blend until you have a homogeneous mixture.
The paste is perfect for your curries. Instead of store-bought paste, simply add 1-2 tbsp. The paste is easy to portion and can be frozen for approx. 3 months.
