The former "Nobs" food factory was founded by Hans Nobs in Münchenbuchsee near Bern. Originally, the company was primarily known for its infant formula "Berna", a brand that is probably still well known to the older generation. Today, the traditional company specialises in the processing of nuts. The centrepiece is the 100-year-old oven with Art Nouveau elements, which enables a traditional roasting process.
The co-operation between Nobs and Pakka dates back to 2007. Starting with classic salted cashews, the range of nut varieties and flavourings has grown steadily.
It takes several steps before we can enjoy the crunchy kernels. This involves not only real manual labour, but also a lot of muscle power.
Step 1 - Raw material
The raw goods are delivered and checked for quality. Nuts that have been damaged during transport are carefully sorted out by hand. The nuts are then distributed onto trays and placed in the oven.
Step 2 - Roasting
Roasting takes place without oil at low roasting temperatures. This preserves the valuable nutrients and keeps the natural flavour of the nut unadulterated. The roasting time is adjusted depending on the moisture content, which is a decisive factor for quality.
Step 3 - Seasoning by hand
After roasting, the nuts are mixed with the spices by hand or with the help of a drum. In addition to the respective pakka spice mixtures, gum arabic, a natural, fat-free and vegan bonding agent, is used.
Step 4 - Drying
The nuts are then spread out again on the tray and briefly put back in the oven to dry.
Step 5 - Cooling down
The roasted and spiced nuts need to cool before further processing.
Step 6 - Filling, eyeletting and packaging
The refined nuts are then filled into transparent bags, sealed, eyeleted and packed in shipping cartons.
