Recipe for 4 people
Ingredients
Granola
- 70g coconut oil
- 70g maple syrup
- 200g oat flakes
- 100g sunflower seeds
- 100g cashews
- 100g macadamia
- 70g wholemeal flour
- 1 pinch of salt
Smoothie bowl
- 4 bananas, ripe
- 600g blueberries, frozen
- 1 tbsp maple syrup
- 2 tsp vanilla paste
- 200g coconut milk yoghurt
Topping
- 100g fresh berries, e.g. blackberries, raspberries, blueberries
- 100g coconut milk yoghurt
- Fresh flowers
Preparation
Step 1
For the nutty granola, heat the coconut oil and maple syrup over a low heat to make it more liquid. Mix all the dry ingredients and add the maple syrup and coconut oil. Mix everything well so that all the nuts and flakes are coated. Spread on a baking tray lined with baking paper. Bake in a preheated oven at 150 degrees for 18 minutes. Leave to cool.
Step 2
Cut the bananas into pieces and finely puree in a blender with the blueberries, coconut yoghurt, maple syrup and vanilla paste and pour into bowls. Decorate with coconut yoghurt, berries, granola and pretty flowers. Serve and enjoy immediately.
