The delicious Christmas biscuit classic!
Ingredients for 50 croissants | Preparation 10 minutes | Preparation 120 minutes | Total 130 minutes
Ingredients
- 200g flour
- 80g almond
- 65g icing sugar
- 175g margarine or vegan butter
- 1/2 tsp ground vanilla
- 2 tbsp plant-based milk
- 1 pinch of salt
- Icing sugar for rolling the vanilla crescents
Preparation
- Finely grind the almonds in a food processor.
- Mix the flour, sugar, vanilla and ground almonds in a bowl.
- Add the margarine and plant-based milk and knead into a dough.
- Wrap the dough in cling film and chill in the fridge for an hour.
- Shape small portions of the dough into a roll, cut into approx. 10cm pieces and shape into small croissants.
- Place the croissants on a baking tray lined with baking paper and chill for another 15 minutes.
- Bake the croissants in a preheated oven at 180 degrees top/bottom heat for 10 to 12 minutes, the croissants should remain light in colour.
- While still warm, carefully roll the vanilla crescents in a plate of icing sugar so that they are completely covered in icing sugar.
- Leave the finished vanilla crescents to cool on a wire rack.
Tip:
Like all Christmas biscuits, vanilla crescents should be stored in well-sealed tins or preserving jars. They will keep for a good six weeks.
