Ingredients for approx. 24 pieces
• 300 g Weissmehl
• 1 TL Backpulver
• 200 g Rohrohrzucker
• 2 EL Sojamehl
• 5 EL pflanzliche Milch
• 50 g vegane Butter (weich)
• 30 g Pakka Cashews
- 30 g Pakka almonds
- 30 g Pakka hazelnuts
- 40 g dried cranberries
- 40 g dried dates
- 40 g candied oranges
- 1 tbsp Cointreau
How to make it
- Roughly chop the nuts and fruit.
- Mix 2 tbsp of soya flour with 5 tbsp of plant-based milk in a bowl.
- Place this mixture in a bowl with the flour, baking powder, sugar, vegan butter and 1 tbsp Cointreau and mix well, add the chopped fruit and nuts to the mixture and combine to form a dough.
- Shape the dough into two rolls approx. 5 cm in diameter, wrap in cling film and place in the fridge for 30 minutes.
- Preheat the oven to 200 degrees top/bottom heat.
- Place the rolls without the cling film on a baking tray lined with baking paper and bake in the oven for 30 minutes, then remove from the oven and leave to cool slightly.
- Then use a sharp bread knife to cut the cantucci into pieces approx. 1½ cm thick and place them cut-side down on the baking tray.
- Bake in the oven for a further 5 minutes, then turn and finish baking for 5 minutes.
- Remove the cantucci from the oven and leave to cool on a wire rack.
