Satay skewers with peanut sauce are one of the most popular street food dishes in Thailand. These tofu skewers bring Thailand to your home.

Ingredients
For 4 people
For the peanut sauce
- 20g salted peanuts
- 100g creamy peanut butter
- 4 tbsp soy sauce
- 4 tbsp palm sugar
- 2 tsp rice vinegar
- 1 tbsp lime
- 1 garlic clove
- 1cm ginger
- 1 Thai chilli or ¼ tsp chilli flakes
- 1 tbsp oil
- 300ml organic coconut milk
For the satay skewers
- 400g tofu
- 6 tbsp cornflour

- 400g basmati rice
Preparation
Peanut sauce
- Finely chop the peanuts
- Peel and finely chop the ginger and garlic
- Deseed the Thai chilli and cut into fine strips
- Heat the oil in a pan and fry the chopped peanuts, ginger, garlic and chilli for 2 minutes
- Deglaze with the coconut milk and bring to the boil
- Then add the peanut butter, soy sauce, palm sugar, rice vinegar and lime juice, stir well and simmer over a low heat for 10 mins.
Satay skewers
- If the tofu is very moist, you should first press it in a tofu press for 15 minutes and then cut it into approx. 2 cm cubes
- Place the cornflour and tofu in a bowl and mix carefully so that the tofu is completely coated
- Place the tofu in a clean bowl and mix with 6 tbsp peanut sauce so that the tofu is marinated on all sides
- Place 4 tofu cubes on a skewer at a time
- Fry the skewers in a frying pan with a little oil over a medium heat until golden brown on all sides
- Serve the tofu satay with the peanut sauce and basmati rice, accompanied by Thai cucumber salad
Tip!
If you prefer the peanut sauce a little thinner, you can simply add a little more coconut milk.
